Behind Ripailles are Agathe and Thomas, two longtime friends united by their shared passion for gastronomy. Over time, the duo developed expertise in the art of hosting, organizing memorable events and dinners for their friends and families. After several years in the hospitality and restaurant industry, their love for food and service led them to create Ripailles.

THOMAS ROULLIER
Founder & Head Waiter

After earning a Bachelor’s degree in Restaurant Management from the Grégoire Ferrandi School, Thomas continued his training with three years of apprenticeships in brasseries and Michelin-starred hotels in France and England. He then decided to go to Australia to further his culinary training and deepen his understanding of kitchen operations.

Upon returning to Paris, Thomas joined the front-of-house teams of Théo Pourriat and Bertrand Grébaut. He climbed the ranks, first taking the lead at the restaurant Clamato, then at the restaurant Septime.

He co-founded Ripailles with Agathe in September 2021.

AGATHE MOLIS
Founder & Head Chef

Agathe, who had spent several years working in the fashion industry, decided to change careers and pursue her passion for cooking. In 2016, she earned her CAP diploma in culinary arts and began an apprenticeship under Chef Rémi Poulain. She worked alongside him for three years at the restaurant Le Christine, eventually reaching the position of sous-chef. Afterward, Agathe became head chef at the bistronomic restaurant Dame Nation, where she was able to further develop her creativity over the two years she spent there.

She co-founded Ripailles with Thomas in September 2021.
