
After earning a Bachelor’s degree in Restaurant Management from the Grégoire Ferrandi School, Thomas continued his training with three years of apprenticeships in brasseries and Michelin-starred hotels in France and England. He then decided to go to Australia to further his culinary training and deepen his understanding of kitchen operations.
Upon returning to Paris, Thomas joined the front-of-house teams of Théo Pourriat and Bertrand Grébaut. He climbed the ranks, first taking the lead at the restaurant Clamato, then at the restaurant Septime.
He co-founded Ripailles with Agathe in September 2021.
